Beef and Broccoli

Beef and Broccoli is my go-to when I want something that feels like takeout, but I don’t want the takeout bill (or the wait). My friend Dana shared her version of this with me, and it immediately earned a spot in our simple supper rotation. It’s quick, simple, uses basic ingredients, and comes together fast in one pan.

Tender beef, crisp broccoli, and a savory sauce that makes everyone happy, this one is one of those weeknight saves you’ll come back to again and again. Bonus: it makes great leftovers, too!

Ingredients

Instructions

  1. BROWN ground beef with taco seasoning.
  2. CHOP, RINSE, and SPIN romaine lettuce (or buy rinsed and ready) and ADD to a large bowl.
  3. DRAIN and DUMP can of black beans and can of corn onto lettuce.
  4. WASH, HALVE, and ADD grape tomatoes.
  5. CHOP and ADD avocado.
  6. ADD shredded cheese.
  7. ADD browned ground beef and mix.
  8. MIX desired amount of Thousand Island dressing with a little bit of water and taco seasoning to use as a dressing.
  9. CRUMBLE tortilla chips on top or use to scoop the salad.

Notes

Use what you've got! Red pepper, onion, or any other favorites... this is a "toss in what works" kind of recipe.

Got picky eaters? Grab some soft tortillas and turn it into a burrito instead. I do this for my daughter who's not a fan of "salad." You can also keep the ingredients separate and let everyone build their own. Burrito bar, salad bar... whatever gets dinner on the table without complaints.
