Beth’s Taco Salad

This taco salad came from my sweet friend Beth, who invited us over one night and casually served up the best taco salad I’ve ever had. It’s the kind of recipe that’s almost too easy… brown some beef, open a few cans, toss everything in a bowl, and boom. Dinner.

It’s super flexible too. You can customize it with whatever veggies or toppings you like, and the dressing? A genius shortcut: Thousand Island mixed with taco seasoning. (Don’t knock it till you try it. It totally works.)

It’s now one of my go-to meals for busy nights, picky eaters, or when I just want a no-fuss dinner that still feels like a win.

Ingredients

Instructions

  1. BROWN ground beef with taco seasoning.
  2. CHOP, RINSE, and SPIN romaine lettuce (or buy rinsed and ready) and ADD to a large bowl.
  3. DRAIN and DUMP can of black beans and can of corn onto lettuce.
  4. WASH, HALVE, and ADD grape tomatoes.
  5. CHOP and ADD avocado.
  6. ADD shredded cheese.
  7. ADD browned ground beef and mix.
  8. MIX desired amount of Thousand Island dressing with a little bit of water and taco seasoning to use as a dressing.
  9. CRUMBLE tortilla chips on top or use to scoop the salad.

Notes

▶ Use what you've got! Red pepper, onion, or any other favorites... this is a "toss in what works" kind of recipe.

▶ Got picky eaters? Grab some soft tortillas and turn it into a burrito instead. I do this for my daughter who's not a fan of "salad." You can also keep the ingredients separate and let everyone build their own. Burrito bar, salad bar... whatever gets dinner on the table without complaints.
