One-Pot Creamy Tomato Fettuccine

Everything cooks together in one large skillet… fettuccine, cherry tomatoes, onions, broth, and a creamy finish, so there’s no separate pot of boiling water and no draining. While it simmers, the tomatoes break down into a cozy, creamy sauce, and a handful of spinach makes it feel a little more “real dinner” without extra work. What I love about this recipe is you can make it as a vegetarian dish or stir in cooked chicken or browned ground beef to boost the protein. Either way, dinner’s handled and simply delicious.

Ingredients

Instructions

  1. ADD pasta, red onion, cherry tomatoes, garlic, tomato puree, oregano, basil heavy cream, vegetable broth, spinach, and olive oil to a large skillet. (Hold off on the protein and spinach for now.)
  2. COVER and bring to a boil over medium heat.
  3. BOIL for 11-12 minutes.
  4. REMOVE lid and stir. Add additional protein, if desired.
  5. SIMMER uncovered for an additional 2-3 minutes, or until sauce has thickened to your liking.
  6. SEASON with salt and pepper to taste and SERVE.

Notes

▶ Fettuccine nests work great here because they cook right in the sauce. No pre-boiling needed.

▶ Depending on the size of your skillet, add more broth a splash at a time to ensure pasta cooks thoroughly.

▶ This recipe reheats great for leftovers.
