- ADD pasta, red onion, cherry tomatoes, garlic, tomato puree, oregano, basil heavy cream, vegetable broth, spinach, and olive oil to a large skillet. (Hold off on the protein and spinach for now.)
- COVER and bring to a boil over medium heat.
- BOIL for 11-12 minutes.
- REMOVE lid and stir. Add additional protein, if desired.
- SIMMER uncovered for an additional 2-3 minutes, or until sauce has thickened to your liking.
- SEASON with salt and pepper to taste and SERVE.

▶ Fettuccine nests work great here because they cook right in the sauce. No pre-boiling needed.
▶ Depending on the size of your skillet, add more broth a splash at a time to ensure pasta cooks thoroughly.
