Start by seasoning and sautéing chicken until golden, then cook down the peppers and onions for that sweet-meets-spicy base. A few pantry spices and a splash of cream turn into a rich, dreamy sauce that wraps around the pasta perfectly. Any shape works here: penne, rotini, whatever’s in your pantry. Ingredients

Instructions

  1. START cooking pasta according to package instructions.
  2. Meanwhile, CUT chicken breast into 1" pieces and season with 3 tsp Cajun seasoning, plus salt and pepper.
  3. MELT 2 tbsp butter in large skillet over medium heat, and COOK chicken, stirring occasionally. Meanwhile, WASH peppers and PEEL onion, and SLICE vegetables. Remove chicken from heat and set aside in a bowl.
  4. MELT remaining butter in skillet. ADD peppers and onion, stirring frequently until onions begin to appear translucent (about 3-5 minutes).
  5. ADD heavy cream, paprika, basil, garlic powder, remaining Cajun seasoning, and more salt and pepper. Bring to a boil and then reduce to a simmer until sauce is thickened, stirring occasionally.
  6. ADD chicken back to the skillet along with cooked, drained pasta and parmesan cheese and STIR.
  7. SERVE in bowls.

▶ Breakfast for dinner has become a regular rotation in our house, and this recipe anchors our meal. Pair with bacon or sausage, add a side salad, or complete with pancakes for dessert.

▶ Feel free to swap out the veggies to whatever else you like! Just make sure it’s no more than 3 cups. We’ve tried both sausage and mushrooms in this recipe, and it also came out well.
