- TRIM chicken breasts and PLACE in slow cooker.
- COVER with barbecue sauce.
- COOK on low for 6 hours.
- 30 minutes before slow cooker timer is complete, PREHEAT oven to 450 degrees and CHOP cauliflower into florets.
- TOSS cauliflower with olive oil and garlic and place on a sheet pan. SEASON with salt and pepper.
- BAKE for 25 minutes, stirring half way through.
- TOP with parmesan cheese and BROIL for the last 3-5 minutes.
- SHRED chicken with two forks and serve on slider buns to make sandwiches. Top with additional barbecue sauce, if desired. SERVE with roasted cauliflower.
